Chef Ross Munro
Sims Corner Steakhouse & Oyster Bar
Chef Ross' career has taken him around the world, and he always sought out grassroots food wherever he landed. Now a permanent fixture here in PEI, Chef Ross brings with him a wealth of knowledge, along with his love and ability to meld flavours with his cuisine.
Chef Ilona Daniel
Hailing from the Greater Hamilton area, Ilona is a graduate with Honours from the Niagara Culinary Institute’s Culinary Management Program. Ilona’s passion for using local and artisan products was first sparked while working in the heart of Niagara’s wine country. It was there that she learned how different peaches from Washington were in comparison to the sun drenched, Niagara peaches picked ripe from the tree. That was just the beginning- volunteering at various food and drink festivals opened her eyes to the importance of working and supporting the community she was now part of.
This year Ilona represented Prince Edward Island at the Canadian Chefs’ Congress in British Columbia
Chef Dwayne MacLeod
The Gahan House Pub and Brewery
Chef Dwayne MacLeod started cooking at the age of 16, for a diner in Charlottetown PEI. So the journey began! He attended The Culinary Institute of Canada in 2002, and graduated in 2003. He has been working in PEI since 2003, and he loves working exclusively with local ingredients and farmers.
Since his Sous-Chef position at Sims Corner, he has been promoted to Head Chef of The Gahan House. It is here at The Gahan House that you will find the wonderful daily specials that he creates with his team, ensuring for you a great mixture of pub-favourites, traditional Island meals, and entrees.
